In order to obtain the desired yield and quality essential oil from the lavender plant, the harvest must be done on time. Harvest time varies depending on the climate of the regions where the production is made and the type of lavender used in production. However, when many studies are taken into account, it is seen that the most suitable harvest time is about 50% flowering period. Harvesting should be completed in a short time, starting when 50% of the plants bloom. Because the delay in the harvest after the harvest time will cause the product to lose its quality quickly. Lavender plants begin to bud in June and bloom in July (Aslancan and Sarıbaş, 20119). Flowering time varies depending on the species and variety, climate and soil conditions, altitude and direction. Harvest time in lavender is very effective on essential oil yield and quality. Likewise, especially for large plantations, it is important that the weather be sunny and free of precipitation during the harvest period. Because the quality of the oil to be obtained from the material that comes into contact with water during the harvest period deteriorates and rapidly loses its market value. On the other hand, harvesting should not be done as much as possible on days when the weather is very hot and windy. Because the loss of essential oil due to transpiration is high in the harvest to be made on such a day. Similarly very cold weather is not suitable for harvesting because it prevents the development of esters.
Harvest should be done by mowing 15 - 20 cm below the point where the flowers on the flower spikes end. It is possible to harvest the plant with different tools. Saw blades are mostly used for lavender harvesting. In recent years, large fields have been harvested with gasoline hedge trimmers and lavender mowers.
